Madhya Pradesh: Major Hotels' Kitchens Found Unhygienic, Licenses Suspended as Investigations Intensify
Food safety violations exposed in Madhya Pradesh's prominent hotels, leading to license suspensions and intensified checks across the state.

Food Safety Lapses in Prominent Establishments Exposed in Madhya Pradesh
Madhya Pradesh has witnessed a stark revelation of negligence towards food safety standards by major establishments. During a special inspection campaign conducted by the Food Safety Department and the Food Safety and Standards Authority of India (FSSAI) across the state, several renowned hotels and restaurants were found with serious deficiencies in their kitchens, storage areas, and food material maintenance.
As a result of these actions, the food licenses of some establishments have been suspended, while proceedings to revoke the licenses of others have been initiated. Inspection teams discovered gross lack of cleanliness, presence of pests like rats and cockroaches in kitchens and storage areas, use of expired food products, improper packaging and labeling of food items, and unsafe storage of vegetarian and non-vegetarian food.
Officials have clarified that any disregard for hygiene and safety regulations in food establishments will not be tolerated under any circumstances.
Siyaji Hotel's Kitchen in Disarray, License Suspended
During the inspection of the prestigious Siyaji Hotel in Indore, the food safety team found a disturbing situation in both the hotel's main kitchens and its bakery. The presence of rats in the storage area and cockroaches on food preparation platforms posed a significant risk of food contamination.
Officials expressed strong objections to these findings. Additionally, approximately 66 kilograms of non-vegetarian food items were found stored without proper packaging, batch numbers, and expiry dates. This is a violation of food safety regulations, which mandate all essential information on packaged or properly stored food items.
The discovery of vegetarian and non-vegetarian food items stored together in Siyaji Hotel's cold storage further highlighted a major risk of cross-contamination. The inspection also revealed fungus in peanuts and spoilage in vegetables like potatoes and tomatoes.
Due to these severe lapses, both main kitchens and the bakery of the hotel were sealed, and the restaurant's food license was suspended.
Five-Star Hotel's State License Under Scrutiny
Another significant irregularity related to Siyaji Hotel came to light during the investigation: despite being a five-star hotel, the concerned unit was operating with a State License instead of a Central License.
According to food safety regulations, the category of license is determined by the scale and scope of the establishment's business. The failure to adhere to the correct license category in this case was considered a major oversight.
Action Against Courtyard by Marriott in Bhopal
In a similar vein, action has been taken against the Courtyard by Marriott hotel in Bhopal for alleged violations of food safety standards. A joint team of the Food Safety Department and a central agency conducted an surprise inspection of the hotel.
The inspection found the hygiene conditions in the hotel's kitchen and storeroom to be concerning. Evidence of dirt and the presence of rats were found in the kitchen area. Deficiencies were also noted in the methods of handling and storing food items, particularly regarding the improper storage of vegetarian and non-vegetarian products, increasing the risk of cross-contamination.
As a result of these irregularities, the hotel's food license has been suspended or is facing revocation.
Adams' L Restaurant: Over 10 Expired Products Found
Action was taken against Adams' L Restaurant in Indore following a complaint received on the CM Helpline. During the inspection, more than 10 food products with expired dates were found in the restaurant's kitchen and storage.
The presence of insects in spices like pistachios, chili powder, and fennel seeds also raised questions about the quality and storage arrangements of the food items. In the restaurant's deep freezer, vegetarian and non-vegetarian food items were stored together.
Furthermore, the medical fitness certificates of the cooking staff and water testing reports could not be produced. Due to these shortcomings, the restaurant's food license was suspended with immediate effect.
Mobile Court Action in Bhopal: Rs 51,000 Fine Imposed
Enforcement actions continued in Bhopal regarding food safety violations. A mobile court presided over by a Special Municipal Magistrate conducted surprise inspections of several hotels and restaurants.
During these inspections, a total fine of Rs 51,000 was imposed on 11 establishments for failing to comply with hygiene, food material maintenance, and other prescribed standards.
The mobile court's actions have caused concern among hotel and restaurant operators, and officials have reiterated that legal action will be taken immediately upon finding any violations of the rules.
Campaign Scope: Small Establishments Also Under Scanner
The Food Safety Department's campaign is not limited to large hotels or branded restaurants. All establishments, including small restaurants, dhabas, bakeries, sweet shops, catering units, and those involved in the manufacturing or storage of food items, are under scrutiny.
Officials are primarily focusing on places where food is prepared for a large number of people, as even a minor lapse in hygiene at such locations can lead to serious health crises.
Emphasis on Kitchen Hygiene, Risk of Cross-Contamination
During food safety inspections, a thorough examination is conducted not only of the quality of food items but also of the entire kitchen system. This includes critical aspects such as separate storage of raw and cooked food, distinct arrangements for vegetarian and non-vegetarian ingredients, refrigeration and deep freezing conditions, personal hygiene of staff, water quality, expiry dates of food items, and packaging.
The presence of pests like rats and cockroaches is considered particularly serious due to the high risk of disease transmission through food.
Growing Concern Among Hotel Businessmen, Emphasis on Accountability
Following the continuous emergence of these lapses in prominent hotels, a climate of concern has spread among hotel and restaurant business owners. The inclusion of major brands and five-star hotels in the investigation has sent a clear message that compliance with food safety regulations is mandatory at all levels.
Experts believe that kitchen hygiene, food quality, and safe storage systems are more crucial than expensive decor and modern amenities. The department's actions aim to make food traders accountable for prescribed standards.
This campaign will continue to ensure food safety.
